Pumpkin Banana Muffins

Hello to all Istanbul Moms that love to bake! Great news! I heard recently through the grapevine that there is fresh pumpkin available here in Istanbul. I haven’t seen it as yet, but I’m sure it’s right around the corner. When it comes you’ll be ready to bake up these delicious and nutritious muffins. I found these to be super moist and flavorful. I hope that you enjoy!


1.5 cups oatmeal

1 cup flour (I used gluten free)

1 ripe banana

1 cup pumpkin (I used canned)

1/2 cup yogurt

2 eggs

1/2-3/4 cups honey

1.5 tsp baking powder

.5 tsp baking soda

1-2 tsp cinnamon

1-3 tsp pumpkin spice (Muffins would still be yummy without this. Just add extra cinnamon.)

To prepare:

Preheat oven to 175 degrees Celcius. Blend all ingredients in a blender or with immersion blender in a bowl. Grease muffin pan with butter. Pour batter into muffin pan. Bake 20-25 minutes until toothpick inserted comes out clean. Enjoy!
