Istanbulwoods Chicken Salad

As the weather has been warming up and the sun has been peeking through the clouds, I’ve been craving salad with a vengeance. All winter long I experimented with soup after soup and had fun with the ingredients I found here. However, this past week I wanted to try my hand at some new salad recipes. I need to get my repertoire of picnic foods ready for the summer!

I’ve posted before about Northwoods Chicken Salad, but I don’t think I could find good avocados this time of year. So, I adapted the recipe and made my own, fit for Istanbul ladies!

Istanbulwoods Chicken Salad


1/2 the chicken from a roasted chicken, or 1 chicken breast chopped, seasoned and cooked

2 cups rice (wild is preferred, but white or brown will work fine)

1 cup dried cranberries

1 cup chopped broccoli florets

1 cup chopped red pepper

1 cup chopped carrot

2 green onions finely sliced

1/2 cup chopped red cabbage

For the dressing:

4 garlic cloves

2 tablespoons dijon mustard

1 cup olive oil

Salt and pepper to taste


Combine all salad ingredients in a salad bowl. Put all dressing ingredients in a food processor and combine until smooth. Pour dressing on salad and mix well. Add salt and pepper to taste.

This recipe is great served with a side of soup. Make a double batch and tomorrow’s lunch is already take care of. Afiyet olsun!
