Chicken, Spinach and Rice Casserole- my favorite one pot meal

I made this tonight and it was so delicious I had to share. Who needs Campbell’s Cream of Mushroom soup when you can make this from scratch?

I wish I had a photo, but we gobbled the dish up much too quickly. Sorry! It looks a little like this photo I borrowed from the internet. 


4-6 servings


4 handfuls fresh spinach leaves

1 cup shredded cooked chicken (I baked a chicken using my favorite recipe and used a bit of the chicken for this dish)

1 tablespoon butter

1 diced onion

3 cups cooked rice (measurement is after cooking, not before)

1 cup shredded kaşar cheese

1/3 cup milk

4 eggs, beaten

Salt and pepper to taste

I also threw in some leftover steamed broccoli that I had on hand. It was a delicious addition.


1. Melt butter in cooking pan. Saute onions until you are about to faint from the smell of their deliciousness (about 20 minutes).

2. Steam spinach while waiting on onions.

2. In a large mixing bowl, combine all other ingredients. Add the wilted spinach and onions and stir. Pour into a greased 9×13 baking dish.

3. Bake at 325 farenheit (162 Celcius) for 35-40 minutes, until set in the middle.

4. Enjoy. Afiyet olsun!
